"The best thing I have ever tasted," Nicky, age 8

Old Fashioned Oatmeal Raisin Cookies without the Old Fashioned Sugar or Raisins



In a large bowl:

1.  Add 3 cups of Old Fashioned oatmeal, 1/2 cup Old Fashioned Oats ( I like the gluten free oats from  Trader Joes), 1/2 cup coconut oil, 2 large eggs, 1 cup total of honey and agave nectar, 1 teaspoon vanilla. Beat with electric mixer until creamed.

2.  Reduce the mixer to low; slowly add oats, 1 cup brown rice flour, 1/2 cup coconut flour, 1 teaspoon baking soda, 1 teaspoon cinnamon, mixing until well combined.  Add 1/2 cup walnut pieces and 1/2 cup "enjoy life semi-sweet chocolate mini chips."

3.  Drop one teaspoon onto a greased (coconut oil) baking sheet. Bake in preheated 355 degree oven for 15 minutes.  Let stand on baking sheet 1 minute; transfer to a cooling rack. I used a plate. Enjoy with someone you love!
